    I  have a black bean soup recipe:
    2 Tbsp oil

    1/2 cup Onions

    1/2 cup Ham

    1/2 cup Squash

    1/2 cup Tomatoes

    1/2 cup of each color Pepper

    1/2 cup Pickled Cactus-(Doña Maria-Napalitos-tender cactus)

    1 to 2 cans of Black Beans

    8 oz of Pepper Jack Cheese( spicy)

    Salt to taste( optional)

    1) Cut all vegetables and ham in small squares.

    2) Stir fry with the oil first the onions until clear, then ham, then squash, tomatoes, peppers, pickled cactus.

    3) Stirring constantly.

    4) Then the Black beans.

    5) Let cook 15 min or until done.

    6) Final step the pepper jack cheese in squares let Melt.

    7) Then Serve.

    Put cheese to taste depends how spicy you want it. If it’s too thick for you add a cup of water and cook to desired consistency

    You can have bread, tostones, tortilla, or corn sticks on the side!

    Chicken Roll-ups

    Boil 2 boneless skinless chicken breasts cut up into small bites
    1 can of cream of chicken soup
    1 can  of cream of celery soup
    1 can crescent rolls
    1 cup of milk
    Unroll crescent place cooked chicken roll up , place is a baking dish. Mix soup and milk together , pour over crescent rolls , top with cheese. Bake according to crescent roll package. I have added 5 minutes to cooking time to ensure rolls are cooked.
    Serve with Mashed potatoes

    I most certainly do!  I was a Navy wife/working mom (3 kids) for the longest time.  One of my favorite recipes was a one-pot wonder - less pots, less work.  The kids loved it too.  I call it Chicken, Potatoes & Veggies Galore.  It's cheap and easy too.  You can find the recipe on my hub:  http://lawdoctorlee.hubpages.com/hub/Ch … es-Galore.
