Instant control of the heat. Traditional ranges are wood fired and adjusting heat up and down is slower. Electric is faster than wood and slower than gas. As far as the food is concerned, heat is heat, so you can cook your dinner on any of them.
In addition to Agantum's answer that you get instant control of heat, I would also add that it's more energy efficient. You don't waste extra energy in the time it takes for the heating element to heat up. Plus, natural gas is generally less expensive on your utility bill than electricity (at least in most parts of the United States and Canada).
