How do you to make sure your kids eat vegetables and fruits in order to obtain required vitamins?
Smooties. Add all the vegetable and fruit into the smooties and give them either in the morning or after dinner to the kids.
Also use a straw to help them avoid them getting enamel decay on the front teeth due to sugars in the fruit.
I got on board with this from the get-go. When the kids' pediatrician said that they could start on strained foods, the first recommendation is something like apricots or peaches.
While fruit is healthy, such a beginning pre-disposes the child to prefer sweets. So instead, I substituted yams and sweet potatoes for the yellow/orange fruits.
My kids grew up with a taste for vegetables, and I never had an issue "getting them" to eat same.
Our society seems to be stuck on sweets, and a too-early intro to sweet foods only encourages the problem.

Do your kids eat vegetables and at what age did you introduce vegetables in their diet; was it difficult or easy to get them to eat veggies? Do you 'hide' or disguise the veggies or serve it plain?
