If you were limited on the food you had for a day, Could you create a meal to feed your family?
Make a dish in large quantities to serve for several meals. Make a salad with lots of veggies, a meatloaf with lots of healthy filler like minced veggies, oats, flaxmeal, tomato sauce. This really stretches the meatloaf. Brown rice is very inexpensive, especially when you buy it in large sizes. Dessert--fruit in season.
I think so....the first thing that comes to mind would be an american chop suey. not many ingredients and inexpensive and you can make a big potful. Another that comes to mind would be shepard's pie. Again, not a lot of ingredients and inexpensive.
Pasta and rice are good bases to use for casseroles. I would also consider preparing a giant batch of macaroni and cheese and add to it some tuna, peas, corn, and carrots.
