Oh gosh.... I´ve used soya flour and rye flour but I have no professional way to share recipes here since I substituted ingredients just like that, without any knowledge of the outcome. This is an interesting question and I would like to follow the good answers if that´s OK.
I'm hoping to get some good answers and to bookmark this! I just found a stash of 15 kinds of meals and flours at my local gourmet grocery. They are not very costly and will be a great way to explore different foods.
