   I mix it up a lot this year I'm using my smoker and smoking a pork roast, a whole chicken  and a cornbeef brisket................my sides are fried cabbage and collard greens and some candied yams...................my dessert is cheese cake tarts with your choice of toppings strawberry, cherry and lemon. oh And some homemade yeast rolls with homemade honey butter.

   We have our main meal on Good Friday. The main dish is fish, vatapa (a dish made with bread, dendê oil, coconut milk, peanuts, and shrimp), a dish made with okra, another dish with shrimp and coconut milk, rice, salad, etc.

   We always go out to brunch, so eggs benedict, ham, potatoes -- and lots of cheese!

      Sounds good. I just spotted something on a site with lots of food that you might like. You take ham and put slices in a muffin tin. Then you add veggies,cheese, potatoes, and scrambled eggs inside the ham and bake for 20 min.
