How do you pick a good olive oil for finishing?
I've heard that olive oil companies are not required to publish their ingredients, so you never know what percentage of olive oil vs. canola, vegetable, or safflower oil you're actually getting. How do you pick a good one? And particularly how do you pick one that's good for things like dressings or finishing where it will be tasted directly?
