3 Meatless Breakfast Combos

Fantastic, Fruity, Flavorful and Fun!

Who says that every meal has to have meat?

More and more people are choosing to go meatless as they discover great vegetarian recipes.

Breakfast is my absolute favorite meal of the day.

Let me qualify that a little better, breakfast foods are my favorite meals of the day and that could mean breakfast. lunch or dinner.

As much as possilbe I like to incorporate fruit into my meals. For these non-meat meals I have included some of my most delicious combinations for you to enjoy.

#1 French Toast Combo - French Toast with apples and whipped topping. Grits and hash browns.

Although I do like my own Cinnamon French Toast that I make from scratch, I am not very good at making my own hash browns. So I buy frozen shredded hash browns and just cook up what I need.

The grits are Quaker's (store bought) pre-packaged and measured. If I didn't buy my grits in packets they would probably turn out like concrete. I'm a southern girl, but not a southern cook! This way is safer, trust me.

You can use syrup if you like, I prefer fruit and butter. As for the fruit and whipped topping, I generally like cherries, but for this photo I chose to pretty it up and used apples and whipped cream. I don't put whipped topping on mine, but don't you agree it looks good with it?

  • 2 slices of French toast
  • fruit pie filling or homemade
  • grits
  • shredded hashed browns
  • fat free whipped topping
  • butter or margarine

I really like how the Chefs on these videos prepare several breakfast dishes. They are quick and easy. Some do include adding meat to the meal, but you don't have to. What's nice is that in video #5, you can do meat or leave it out and the trifle will still be outstanding. Think I might have this for dinner tonight! Yum ...

Beautiful Dishes for Your Creations

This omelet and fruit combination is wonderful. Fresh pineapple, cantalope with mandarin oranges were refreshing and cleanse the palate.

Homemade blueberry muffins with fresh blueberries and a cup of coffee completed the brunch experience.

Ingredients

  • 2 -3 eggs for the omelet
  • American or cheddar cheese slices and shredded
  • diced fresh green bell peppers (you can also use red or yellow peppers)
  • small mandarin oranges
  • cut fresh fruit of choice into cubes ( pineapple - cantalope - watermelon)
  • blueberry muffin
  • cooking spray

#3 Oatmeal Combo - Oatmeal, Rye toast, tea, fruit

I can tell you that this is a fabulous breakfast (or any time of the day) meal. It's one that I enjoy often. Try adding cinnamon, raisins and diced apples to the oatmeal before cooking to get a fantastic flavor. (Follow oatmeal cooking directions on the carton.)

For this meal (that I actually ate for dinner) I added more fresh fruit to the top. Most of the time I don't add any almond milk and enjoy it just the way it is. The cantalope was at the peak of flavor and the Russian Rye toast gives it that crunch that your taste buds want.

Usually I serve this with a cup of decaf tea, but for this particular sitting I enjoyed Lady Grey (Breakfast) tea.
