Wash the vegetables before cutting to keep vitamins in, put half tea spoon fat free oil in to a pan and  put the vegetable in it. Add one spoon water and cover it. Heat under mild  flame or  heat. The vegetable will be cooked by the steam. If necessary keep adding  one spoon water or spray water on the hot vegetable and cover again. If you like you can add a pinch of salt and pinch of red pepper /black pepper  powder on it. Eat with roti (Indian bread made of wheat flour, available in supermarket in frozen section) or freshly cooked rice. Rice is best cooked in  rice cooker Have some soup too with it. Tomato or sweet corn are good for you. Most vegetables can be cooked by the above method. Some take time.Egg plant and okra cook very fast. Be sure to look for any insects  inside. Remove the piece around that completely. When you cook cabbage or cauliflower in water instead of throwing the water away use it to make soup. You will be very healthy  .
Three essentials -Don't cook in oil, don't deep fry, don't use oil that was used once, don't cut vegetables and wash, don't eat preserved food, eat freshly cooked meal, eat light.

My hub "Five easy steps to cooking quick and healthy meals" http://hubpages.com/hub/5easystepstoquickhealthymeals should be helpful for you. The key is to use lean ingredients, cook with plenty of vegetables, use easy recipes that have detailed nutritional information, and be organized! It sounds difficult, but it's easy once you get the hang of it. smile
