   Flat and hard...I'd love to make a biscuit that is flaky and light, but I just not had any luck. I love to cook and I'm pretty good at it, but baking seems to be a little difficult for me.

   I often make biscuits when I discover whole milk or half&half has gone bad. Plain bisquick does all right, but if you want it flakey you'll need a recipe with butter.

   I have a simple recipe for baking powder biscuits , very easy to make. You will need 2/3 cup shortening , 2-2/3 cups all purpose flour,1-1/2 TBS sugar, 1-1/2 TBS baking powder, 1-1/3 tsp salt and 1 cup milk.  Heat oven to 450 degrees , cut shortening into flour , sugar, baking powder and salt until the mixture looks like fine crumbs. Stir in milk until dough leaves side of bowl.( dough will be soft and sticky) turn onto a floured surface,knead lightly 10 times , roll or pat dough to 1/2 inch thickness. Cut with a floured cutter or glass , place 1 inch apart on  ungreased cookie sheet . Bake 10 - 12 minutes or until golden brown . Enjoy

   Delmer, it sounds like you are handling the dough too much. Keep everything very cold, even the mixing bowl and roller. Mix the ingredients just enough to bring them together. Roll out on the board and cut out the biscuits. Pretend they are fragile and must get into the over as soon as possible. Which actually is true. Regards, HB

   I am glad you asked this question, as I also have the same problem. I think I am too heavy handed. I will try Lockgirl's recipe.
   
   Have you checked that your oven temperature is correct?
