For those of you who want to take off pounds fast, the low carbohydrate diet may be just for you. Low carb diets have been the rage for many years. These diets often go from extremely low carbs to moderate intake of starchy foods. Dr. Atkins became famous with his strict low carb diet, and those with a desire to lose weight quickly followed his plan. Eating fatty bacon and juice steaks was quite a treat in the beginning, but soon one got the munchies and wanted something crunchy to eat. You can go on a low carb diet and have a variety of vegetables and even some fruit with your meals.

Eat Your Steak and Avoid Too Much Fat

Steak is often a favorite entree with most of us. Before you go on a steak rampage due to the low carb nature of meat, select cuts of meat that are low in fat. Skirt steak and tenderloin have low fat content. You can also enjoy pork tenderloin which also is low in fat. Protein is very satisfying and will satiate your appetite. Season the food well to really enjoy this diet.

For a special treat make a tasty wine sauce for the steak. Make sure to serve a crunchy green salad and fresh veggies to add a healthful note to your steak dinner.

Cottage cheese is fairly low in calories as well as carbs. Try putting the cheese in the blender with a small amount of milk and you will have a creamy and delicious treat. Season with salt and pepper and add veggies. You can also add some low carb fruits when the sweet tooth hits.

How many carbohydrate grams is considered Low carb.

The amount of carb grams varies with different diets. The Atkins diets starts with 20 grams of carbs, which is extremely low. Some low carb diets include up to 60 grams of carbs. You can find one that suits your lifestyle; and another determining fact is how much weight you want to lose. You can still enjoy some of your favorites while adhering to a low carb diet.

Fish and Seafood

All fish and seafood are on the low carb diets. Broil, bake or barbecue the seafood and add lots of seasoning and olive oil .

Bake salmon with added broccoli raab, and a few slices of onion with fresh garlic and you have a satisfying and low carb meal.

Low Carb Soup ideas

Soup is filling and easy to make when you don't feel like cooking.

This easy soup will keep in the fridge for a few days.

Put about 4 cups of water plus 2 cans of low sodium chicken stock in a pot.

Add about 2 chicken breasts cut in small pieces

Add a cup of chopped celery

Add one cup each of spinach, kale to the soup.

Add about 1/2 cup of chopped green onions

Two chopped garlic cloves

1 Cup of green beans

Cook until the chicken is tender and the veggies are cooked

Add a tablespoon of seasoned salt, pepper

Sprinkle on some Thyme, Oregano and Curry powder.

The following vegetables have between 3-5 grams of carbohydrates per serving.

  • Green peppers

An Easy salad idea:

Cut up romaine, argular and spinach. Add cucumbers, andcelery.

Chop up chicken or turkey with cheese

Easy salad dressing:

  • 1/4 cup olive or grape seed oil
  • 1 tablespoon of vinegar
  • 1 tablespoon of water
  • 2 tablespoons of dry parmesan cheese
  • Garlic powder
  • Thyme, Oregano and Basil
  • Salt and pepper to taste



Cook up a bunch of Veggies

Most vegetables are low carb except for potatoes, carrots, peas and corn.

Steam fresh broccoli or green beans, and dress up with sour cream or olive oil and seasonings.

When the veggies are steamed, add some olive oil, garlic salt and fresh parmesan cheese for a tasty and filling veggie dish.

Make mock mashed potatoes with cauliflower. Steam the cauliflower and put in the blender with a little sour cream, butter and salt and pepper.

Bake the cauliflower in the oven when pureed and sprinkle some cheddar cheese on top.

You can even have fruit on a low carb diet. The following fruits are between 4-6 grams of carbohydrates per serving.

  • Watermelon
  • Casaba Melon
  • Cantaloupe
  • Berries (most kinds)
  • Papaya
  • Avocado (officially a fruit)
  • Grapefruit

Make Lettuce Wraps for a Low Carb Meal

Make lettuce wraps instead of sandwiches.

Iceberg lettuce works best for this wrap.

Take a large piece of lettuce and lay it out flat.

Make a tuna salad with mayonnaise, lemon juice, chopped celery and sunflower seeds. Spice it up with cayenne pepper, curry powder and thyme.

Put a generous amount of the tuna salad in the lettuce and wrap. Hold it together with a toothpick.

Some other wrap ideas:

  • Slice turkey and cucumbers and wrap.
  • Roast beef, cucumbers and green pepper.
  • Chicken slices with mushrooms and zucchini



Low Carb Dip

Low carb dips are great when you are really hungry.

Cut up celery, green pepper, mushrooms and cauliflower florets

The Dip

1/2 cup of mayonnaise

1/2 cup of yogurt

1 tablespoon of lemon juice

A can of drained clams

Thyme, oregano, basil

Black pepper

Seasoned salt

Cayenne pepper (optional)

Blend well and put in the fridge until you are ready to dip in the veggies.
