Depends on the person. Usually 1 week is max, but I've heard of 1 month for someone such as Buddha and Jesus.
Jesus and St. Francis of Assisi fasted for 40 days, although to be precise St. Francis actually fasted for 39 days out of humility and respect for Christ. Gandhi's longest fasting lasted 21 days. I don't know of anybody who fasted longer than 40 days and lived.
You can go pretty long as long as you have water. Gandhi did it for 3 weeks.
