What are good sources of carbohydrates for a wheat/milk intolerant vegetarian?
I am vegetarian but also intolerant to animal milks, egg yolks and wheat (and some others but these are the big issues) Often by the afternoon I feel really tired but still have plenty to do. Often I have potatoes or rice/corn pasta for lunch but am looking for some other options.
Quinoa is delicious. I would suggest a nice quinoa pilaf. Some other grains I really like are farro and spelt. Lentils are more a protein, but are very satisfying and nutritious. I like to make a kind of stew with seasonal squash, lentils and veggie broth.
Try potato or rice. Although, like wheat, rice is a grass, it is said that it can be used by people who are wheat intolerant. As is said of barley, pot or pearl.
Try millet or its cousin with the posh name, quinoa, they are said to be high in protein and both contain the essential amino acids. Legumes are said to be a good source of starch as well as protein.
