Crack your neck simply means breaking the air bubble in the gap.
I have heard that doing it often is bad as it will cause a friction or stress on your joint gap where your cartridge will be rubbed. Once it is worn out, you will find your bones rubbing against each other that will cause incredible pain.
I agree with Edhan about the result - cracking your neck too often can wear out cartilage and cause pain. I believe the sound is created by tendons shifting over bone, like a guitar string being plucked. In qi gong (Chinese healing exercises) and yoga, we do not crack the neck or spine. We move very slowly and create space between the vertebrae to release tension and reduce and prevent neck pain.
