How do you get an ex back that probably hates you and has a new boyfriend but said at one point quit
There might no instant way to do that. They only way you can is to try it.
But, don't do it forcefully...
When you were "ON", you knew what she likes, right? Be genuine and do what she likes. Do those things that she wanted and avoid those things that cause the breakup.
That might take sometime, occasionally. As most or some women try to figure out if you are true to your words and actions. If you really is true to it and is willing to put it into habit, not for long...she will recognize it.
The key is honesty and perseverance to put those into real action.
