There are two views on this one.

The traditional religious view is that Moses went up on Mount Sinai, and the Torah, also called the Pentateuch (the 5 books of Moses, the first five books of the Hebrew Bible, which is also called the Christian Old Testament) was written by Moses as dictation from God in Hebrew. Among religious people, some also hold that translations of the Pentateuch into other languages were Divinely inspired. This view is called Mosaic Authorship. The modern, scholarly view is based on linguistic analysis. It indicates that Pentateuch was assembled from long oral tradition and many stories, and it became the central text defining Judaism. In this view, four sources were combined around 450 BCE to create the Torah. (http://en.wikipedia.org/wiki/Documentary_hypothesis)
