I was baptized Catholic so by the time I was old enough to ask questions for myself good and evil had been pretty well defined. The problem I had with their assessments was that everything revolved around them and I don't believe that either good or evil revolves around or is solely the property of any one group or religion. But in answer to the question, for my very young mind it was the Church.
It's odd that you should mention the Catholic church has determined what is good and evil when you take into account the Catholic church was responsible for murdering 50 million people during the dark ages. Did they tell you what they did was evil.
I was about 5 when I started asking questions. I wasn't a big reader of history at 5. In fact, I couldn't read at all at 5. Want to complain about the Catholic Church? Find someone who's still participating or someone who cares...
It doesn't take a Catholic to care about 50 milion people.
Really referencing the dark ages? Are Germans today bad because of Hitler. Are Vietnamese still bad because.... Are Italians bad because of Caesars or Mousaline? Are Scandinavians bad....? Is my son evil because of genocide of Native Americans?
Well Eric, today's catholic church clergies don't murder people. Today the clergies molest small children and then use the church system to hid their crimes. That's evil.
Well you have a point -- but it fails because those are individuals not "the church. But you have a better argument with the way the church handled it. They came about slow but they never condoned it which would be a sanctioning of it.

In the Christian faith, good is what God is and our perception of good is from Him and written on our conscience. His commandments define what is evil.
Hence, the definition of good and evil are transcendent. To clarify, consider this thought experiment: is there someone somewhere in the world that is doing something wrong (evil) right now that you want them to stop regardless of what they think or feel?
This means that what defines what is good or bad has to come from something external to the person and is independent of their perceptions of it. If the definitions of good an evil are not transcendent, then they fail to have any real value.
Custom, pain and the absence of pain, power structures. Similar with the origins of taboo. It then gets crystallized into laws and in older times in myth and so called divine origins to try to add more meaning and force to the contract. So societies as they evolve through the ages are the origin, so it is never completely fixed. In the end when we have these more abstract concepts and restrictions we call the sum total civilization or being civilized.
There is a line of philosophical thought that makes the case that all words and indeed concepts come from context. If I recall correctly the favorite of these thoughts uses the word justice. But love, good, evil and of course right and wrong fit in just as well. Good and evil require a construct and context.
So the speaker in any given usage is who defines the meanings of good and evil. Not even a God or common usage.
Pie is good, means something totally different than God is good. Democrats are evil means something totally different than heroin is evil.
All words are different depending on their usage through the context. And each word has a different definition depending on use.
In line with the spelled backward concept is the dyslexic who praises dog, but takes his god for a walk.
I write a sermon usually weekly. I mean it to mean, and in the context it means a discourse on a moral issue. While out of context it means something like what preachers in church do.
The boy who sneaks a loaf of bread to feed his family who are starving is likely thinks of it as good. Same store different guy gangster robs it at gun point. If he gets away with it - he thinks it is good.
A Christian thinks that God is not only good but great. And an atheist thinks the imaginary thing, god is evil because he has caused such hardship and leads people like sheep. And basically that people who follow religion are evil because the follow something blindly.
Good and evil are defined by the person using them within the confines of context.

That in English evil backwards is live is irrelevant to the meaning of evil.
Good and evil are defined by the religious system. In Judeo-Christian belief systems, all life is sacred and protecting it no matter the religious affiliation is important. In Islam, spreading Islam is the highest good, hence killing a few people horrifically and advertising the atrocity to scare others into converting to Islam is moral, because the conversions to Islam are worth more than the life of the unbelievers.
