What's the best uncrowded National Park in the U.S. to visit?
What's a good place to go that isn't overflowing with people and still has a lot of things to enjoy?

Olympic National Park--definitely--95 % is designated as wilderness. You can go either the total tourist route with your grandma or head out into the real part of the park and leave 99% of the people behind.

in addition to Olympic, mentioned earlier, the North Cascades NP is probably even less crowded - you can drive to Hurricane Ridge in Olympic, although most of the park is only accessible by foot.
but the North Cascades is almost completely inaccessible by motor - both it and Olympic have excellent cross country backpacking possibilities
but uncrowded is relative - Mt Rainier NP is one of the most visited, but it too has plenty of isolated wilderness for those who seek it out
I loved Olympic National Park. We visited it in late August and found it was not crowded at all, the wildflowers were in bloom and the weather was perfect. This park has it all: mountains, rain forests, beautiful coastline. It's worth the time to see all aspects of it.
There are many, many beautiful National Parks and Monuments in the U.S. The number of people at each park will depend on the time of year visited. Many of the parks are even more beautiful and enjoyable during the off season. Visit the Grand Canyon in the winter for clearer weather and fewer people. If you are lucky enough to be there when it snows, the canyon looks frosted and is exceptionally beautiful. Yellowstone National Park is so incredible that it's worth putting up with some crowds just to see it. In Utah, visit Arches, Bryce and Canyonlands in the spring or fall for smaller crowds.
It is impossible to choose "the best" National Park; they are all so beautiful!
Can the environment of Glacier Bay National Park help us learn how to begin colonizing Mars? This is a possibility, but until then, the bay is one of the greatest places in America, according to a US President, Native Alaskans, and travelers. read more
I would vote for Olympic National Park and Theodore Roosevelt National Park (check out my hub on Theodore Roosevelt National Park). Both parks, although completely different, had plenty to see and do, and were very uncrowded.
