    What can I do with left over rice?

    Its long grain and wild rice, if it makes a difference.

    Heat it back up and eat it again.............................add meat and mushroom soup mix and call it cream of rice surprise!   I make alot of mystery dishes......they go over well............

    Make a soup out of it.   Slice and saute some onions.  Add water.  (Premix soup mix are too salty.) Add herbs, your choice of minced protein if you want, add a bit of garlic and spices and some minced veggies.  It should not take long because your rice is already cooked and the rest of the additional items are sliced small so they will cook fast in one boiling. 

    Or, make rice pilaf.  Slice and saute onions in butter, add sliced mushrooms and herbs (dry or fresh). Add shredded carrots, peas, almonds, currants.  Stir to mix and voila, bon appetit!

    My wife (Chinese) usually makes rice porridge with leftovers. Add more water and boil for another 20-30 minutes. That then needs flavour and seasoning. Pork mince and chopped liver are popular here, with diced vegetables such as carrot, mushroom, capsicum. Add a little salt, pepper and soy to taste

    Fried rice, soup, chilli, rice and broccolli, it depends on how creative you want to be. I like to make vegetable fried rice, it's fast and low cal.
