one of my hubs doesn't show any adsense, what's wrong?

Is their a dollar sign next to your hub on the account status page? If it is their means automatic filter tracked your hub for some sort of violation. You will get the detailed reports from the below forum post by Pauldeeds about Automatic disabling of ads.
Yes! I saw your Hub without ads. Thats simply for your goodness. hubpages.com is a great site which shows a great responsibility in protecting its valuable hubbers from getting banned adsense account. This Hub may contain contents violating Google TOS. So you don't need to worry about this. Happy Hubbing!
