I can find how many are following me, but where do I look to see how many I'm following. Under my account, I click on following, and it lists everyone, but is there anywhere it gives a total number?

Under "my account", click on the "following tab" across the top, and then select "hubbers you follow" in the box.
No, there is no numerical value at this time for the amount of Hubbers you follow. I have been hoping for the same thing! If you want to filter the Hubbers or Hubs you follow so that you can delete some, follow these instructions:
Click "My Account" on the top right of the page.
Click "Following" in the middle of the top of that page.
On the left there is a box: Click "Hubbers I Follow"
There are several options for the way you can filter: either by most recent Hubs published by people you follow, or by the Hubbers themselves, alphabetically. You can also unfollow Hubs you follow as well using the same method.

Good question! It's the same with the question you answered. You have to count them on your own if you want to know an exact number.
It would be absolutely wonderful if Hubpages helps us Hubbers this year to see important numbers, such as how many Hubbers we are following.
It's as interesting to know, as it is to know how many Hubbers are following us.
Yeah! I too found missing this. I had to see and count. It would be better if this feature is added to hupages.
Just click on your profile and look at the top of the page beside your name and you will see the number of how many are following you.
Just click the hubpages insignia at the top left and it shows on the right a little down the page.
I always go by the profile page and then just count the pictures of the people I am following. I would love to be able to track who is following me though. I am given a general number but not actually the names. I think that would be a vast improvement on the system if we could see who follows us and who doesn't.
But my answer may not be right as I am still learning the system myself.
