            It's funny. Since you posted this I've seen the word several times in a book I'm reading about a French chef. Apparently it's relevant to quickly preparing dishes for customers too.

              Hmmmm..and here I've always known this word in the context of "learning by rote," I.e., that boring process of repetition and memorization!
              I would have thought that the musical direction for 'lively/quickly' would be 'presto' which I have seen...

                I've never heard of vite in the sense of learning by rote, could it be from Latin and perhaps spelled differently?

                Vite is French for fast. So a French chef would certainly use it, but I'd think only a French composer would use the French common expression rather than the usual Italian.
