Even though world like the taste of Chinese Chili Chicken, there is a desi chili chicken too. It is called Andhra chili chicken because it comes from the state of Andhra Pradesh in south of India. The chicken is tastes even better than the Chinese chili chicken
INGREDIENTS
- Chicken: 1 full medium sized.
- Rice: 2 Tbsp.
- Refined flour: ¼ Cup.
- Yogurt: ¼ cup.
- Oil: ¼ cup.
- Lemon Juice: 4 Tbsp.
- Dry Red chilies: 8
- Garlic: 8 clove.
- Ginger: 2 inch piece.
- Curry leaves: 10 leaves.
- Coriander leaves: chopped 2 Tbsp.
- Salt: As per taste.
METHOD
- Cut the chicken in to 4 pieces. Two legs and two breasts.
- On each chicken piece make 5 slits about ½ inch deep.
- Rub salt deep in to the chicken and then rub two tbsp of lemon Juice. Keep aside.
- Now in a blender put 2 Tbsp of lemon juice.
- Add ginger, garlic, curry leaves and whole red chilies and blend.
- Add rice and blend well to make a fine paste.
- Now in a bowl put yogurt.
- Put this rice paste in the yoghurt and whisk well to form a smooth consistency.
- Add salt in this and mix well.
- Now apply this mixture on the chicken and rub well and let it marinate for 6 to 8 hours in fridge.
- Now when the chicken is marinated, then take a heavy base pan.
- Heat oil.
- Roll the marinated chicken in refined flour and shake off excess flour.
- Put the chicken in the oil and cook for a minute.
- Turn over the chicken pieces and cook for another minute.
- Now reduce the heat and cook the chicken for another 5 minutes, turning chicken few times for evenly cooking.
- Remove the chicken from the pan and drain.
- Now transfer the chicken to a shallow pan.
- Cook on medium heat.
- Add chopped coriander leaves & 2 tbsp of water.
- Cover and reduce the heat to simmer.
- Cook for another 5 minutes.
- Chicken should be cooked by now if not then cook for another minute or two.
- Taste for seasoning.
- Serve hot.
