Best fall squash soup

This is a thick, rich yummy soup with tons of flavor. Something I have made for my family for a long time. It is super easy, quick, and such a great way to use squash. It is a hit at my house, and I’m sure it will be in yours to. This soup will warm you up from the inside out.

Ready in: 1 hour 50 min
Yields: Feeds 6

Ingredients

  • 4 Tbsp butter, melted
  • 1 onion, chopped
  • 1 celery, chopped
  • 2 carrot, chopped
  • 2 sweet potatoes, cubed
  • 1 winter squash or pumpkin, cleaned and cubed
  • 4 c chicken stock
  • To taste Salt and Pepper
  • 3 Tbsp honey
  • 2 tsp ginger
  • 1 tsp nutmeg
  • 1/2 c heavy cream
  1. Preheat oven to 400.
  2. Toss Squash with 2 tbsp melted butter, salt and pepper. and roast for 15-20 minutes until soft.
  3. in Pot add 2tbsp melted butter and cook onion, celery, carrot, and sweet potatoes, till soft.
  4. Add squash, spices, honey and stock to pan and cook for 1 hour
  5. stir in cream and add to blender. blend until smooth. Return to pot, and add stock to attain desired consistency. Season with salt and pepper. Enjoy
