Best fall squash soup
This is a thick, rich yummy soup with tons of flavor. Something I have made for my family for a long time. It is super easy, quick, and such a great way to use squash. It is a hit at my house, and I’m sure it will be in yours to. This soup will warm you up from the inside out.

Yields: Feeds 6
Ingredients
- 4 Tbsp butter, melted
- 1 onion, chopped
- 1 celery, chopped
- 2 carrot, chopped
- 2 sweet potatoes, cubed
- 1 winter squash or pumpkin, cleaned and cubed
- 4 c chicken stock
- To taste Salt and Pepper
- 3 Tbsp honey
- 2 tsp ginger
- 1 tsp nutmeg
- 1/2 c heavy cream
- Preheat oven to 400.
- Toss Squash with 2 tbsp melted butter, salt and pepper. and roast for 15-20 minutes until soft.
- in Pot add 2tbsp melted butter and cook onion, celery, carrot, and sweet potatoes, till soft.
- Add squash, spices, honey and stock to pan and cook for 1 hour
- stir in cream and add to blender. blend until smooth. Return to pot, and add stock to attain desired consistency. Season with salt and pepper. Enjoy
