Easy Soup Recipes--Curried Lentil

Updated on June 23, 2015

Ready to Eat Curry Lentil Soup

Soup Recipes Easy Curried Lentil Soup

Besides being tasty and healthy you can have this easy curry red lentil soup ready to eat from start to finish in 40 minutes. Lentils, unlike other legumes cook up really fast. Add some rice and vegetables and the soup can boast of containing a wide variety of many vitamins and minerals. I generally make a large pot of soup with hopes that it will last for lunches all week long. Besides being a nutritious recipe it is nice to know lunch is ready on a moment's notice. If my husband and I are home together I just plop a bowl of soup down in front of him; of course he always returns for a second bowl. I used red lentils for this soup but brown or green lentils will work just fine.

Ummmm, Carol.....is this something I will like? LOL I'm looking for beef in this and I'm not seeing it! :) I'm sure this is quite delicious for those of you who love this sort of thing; me, I love supporting friends, and I have just completed that task.

Good job on the recipe and yes, I will share it.

You have to love curry to start with. And if you are beef and chicken person..not sure. It is really tasty ..to my taste, but I know what you like in a soup and probably lentils may not fit the bill. (no pun intended). We try to keep animal protein down a bit. So next on the agenda is beef soup...Thinking about that. And as always I appreciate your support and stopping in to check out the lentils.

There is a lot of liquid here..Also after it sits it does become thicker..and I add more liquid each day as we thin it out. Makes a lot of soup and we eat a lot. The lentils cook quickly so they expand quickly..but not as much as some of the other beans. You can use less ifyou wish. Thanks for votes and shares.
