Delicious and Easy Chicken Salad Recipes

Chicken Salad Recipes

Chicken salad is often a great favorite with many of us. After making a whole chicken and eating it for a few days you will want to make something creative with the left over chicken. I decidedly did not want more of the same, so I thought a chicken salad sounded really good. This salad is now dubbed our favorite chicken salad.

Prep time: 30 min
Ready in: 30 min
Yields: Two cups of left over chicken-Four servings

Ingredients for Chicken Salad Recipe

  • 2 Cups Left Over Chicken
  • 1 Cup Chopped celery
  • 1 Cup Chopped red or yellow peppers
  • One-half Cup Sesame seeds
  • One-half Cup Chopped green onions
  • One-half Cup Black or green olives
  • One-quarter Cup Capers
  • One-Quarter Cup Mayonnaise
  • One-quarter cup Greek style yogurt
  • Romaine Lettuce Two or three leaves
  • Cucumber slices, (optional)
  • One teaspoon Garlic powder
  • One tablespoon Basil
  • One tablespoon Oregano
  • One Tablespoon Seasoned Salit
  • Salt and pepper to taste

Instructions

  1. Make the dressing for the chicken salad by combining the mayonnaise, yogurt and seasonings. Blend the ingredients together with a large spoon.
  2. Make sure all the veggies are chopped fine and mix gently with the chopped chicken.
  3. Pour the dressing over the chicken and gently blend together.
  4. Gently stir in sesame seeds, olives and capers.
  5. Add salt and pepper to taste.

Serving Suggestions

Serve a scoop of chicken salad on two or three romaine lettuce leaves. Make sure to have some crunchy crackers or hot sourdough bread to go along with the salad.

      LOL....seems like there are a lot of vegetables in this chicken salad. :)

      I actually eat a variation of this and pretend the veggies are something else. Good job on the recipe.

      I like the sound of this Carol because I do like a bit of crunch to my salad and the celery and spring onions would be perfect. I also really love the flavour of sesame seeds on pretty much anything so this looks like a winner. Voted up etc.

      I like the addition of all the vegetables and often have leftover chicken so great idea. Mine is usually bland because I don't add all these spices.I might try it with a little less mayo to reduce calories. Voted up.

      You can use low fat mayo or low fat sourcream. Both work just as well. It is the spicy additions that make it good. Thanks for coming by.

      Carol...I do like chicken salad and this one sounds yummy. I like that it has all those veggies in it............btw.......bill's comment......Shhhhhh! keep this to yourself, but if you dare read his hub on bachelor recipes.......you will understand that it's BEST you do not know what the "something else" is that he puts in the chicken salad, in place of veggies......No.....trust me...you don't want to know!! LOL

      Carol, this chicken salad sounds delicious! I love that it has olives in it, it sounds great. Thank you for sharing it! My mouth is watering just thinking about it.. Another reason I like it it is because it's healthy, or can be with substitutions. I have a question though, what exactly is capers? Is that the same as green onions or no?

      Capers are a vegetable of sorts. They are tiny little buds and very definite taste. Go to the grocery store and ask a clerk where they are..very often with gourmet condiments.       Hi Carol, this sounds like a great chicken salad! I've got to give this recipe a try. The mayo and yogurt blend is what caught my attention. I'm sure the sesame gives it a nice nutty flavor too. I don't know if the olives will make it to the recipe though. They are just too tempting, I might eat them first! Thanks for sharing.

      Well, how interesting! There are a lot of things in this recipe I'd never thought of adding to chicken salad. Sesame seeds, olives, capers, and peppers, to name a few. I definitely need to be more experimental and take some hints from you.

      On the other hand, a cup seems like a lot of dressing to me.....but everything can be adapted to suit individual taste.

      i love chicken salad, turkey salad, etc, but i am sooo boring - i only like chicken - and mayo..(ok, salt and pepper too)

      it makes me wince to bite into something crunchy in these 2 dishes for some odd reason...lol.

      maybe just cause i'm odd?

      cucumbers are awesome anywhere - including on the eyeballs!
