  • Canola oil for frying

Instructions:

  • Mix the beans with the rice mixture and add all the seasonings

  • Brown the veggies until tender and set aside.
  • Add the egg white, olive oil, cheese to the bean/ rice mixture. Make sure the burgers hold together well.
  • Add the vegetable to the mixture and reform the burgers.
  • Chill in the refrigerator for one hour.

Hi, Carol. Both these burgers look absolutely delicious and there's no doubt about them being considerably healthier than any more conventional burger. An added benefit (certainly in the UK, I'm not sure about the USA) is that turkey is a lot cheaper to buy than beef.

I don't think I've ever tasted a veggie burger but nor have I ever seen one looking so appealing. Although I'm no vegetarian, my Mum is so I was used to vegetarianism while growing up. This is definitely something I need to add to my meals to make list!

These burgers sound fabulous with all of the seasonings, etc. One question...the rice in the vegetarian burger...I am assuming it is cooked rice you add. Correct? Brown rice generally takes longer to cook so my thought is that it would be a bit crunchy if not cooked ahead of time. Will look forward to your answer. We love the vegetarian bean burgers that we purchase frozen from Costco. Would be nice to be able to make our own at home. Up and useful votes, plus tweeting.

This recipe looks amazing and I can't wait to try it. I've never attempted veggie burgers before but will try that one too. Thanks for the great recipes. Voted up!

Carol, thanks for these healthy burger recipes! I've never done turkey burgers @ home, but have eaten them out quite a bit. I think it's time to make some! The veggie burger recipe is a bit too involved for me -- I try to keep things ultra simple in the kitchen, but who knows, I may even try them when I'm feeling industrious!
