    I have this recipe that is gluten free.  So peanut buttery and rich.


    1 cup peanut butter (creamy, crunchy or organic)
    1 egg, beaten
    1/4 cup white sugar
    1/2 tsp baking soda
    1/2 cup brown sugar
    1 tsp pure vanilla extract

    Mix ingredients together and roll into 1 teaspoon sized balls.  Place on a baking sheet and sprinkle with sugar (or Splenda).  Press with a fork to make indentations and bake for 8 minutes. 


    These are SO GOOD!

    When I bake my gluten free cookies, I just use a normal recipe and use my homemade gluten free blend and xanthan gum.  They turn out most of the time.  I wrote a hub on one.  You can check it out.  Babycakes in NYC also makes a gluten free cookie and here's a link to the website for the recipe: http://www.bobsredmill.com/recipes.php? … print=true
