Does anyone know how to make depression era potato candy. I know you mash potato with powdered...
sugar and something else to form a dough. You roll it out, spread peanut butter on it, roll it up, and cut it into pieces. I need the other ingredient and measurements, if there are any. My dad, now deceased, showed me how to make this when I was a child and I'm sorry to have forgotten it.
I have a recipe for it on this Hub:
I have a very old family recipe for mashed potato candy (potato pinwheel) on my blog. Hope this helps! http://christiscollections.blogspot.com … ecipe.html
I made literally pounds of this candy when I was pregnant with my daughter - and ate most of it myself, I'm ashamed to say. The recipe was more like christileaverton's, though it was all mixed together and not in pinwheels. I'll have to experiment to find the right amount of this and that. We were stationed in Ft. Rucker, Alabama and my husband was just about to be sent to Nam. I believe the recipe was passed along to me from another poor Army wife. We were given food commodities which included canned pork and a huge can of peanut butter - other things too but memory fails me. Thanks for asking - brought back some memories.
