What is your favorite summer food?

I love salads of all sorts. Our family needs to get out of our summer food rut. Can you name a food and tell me where you found the recipe so I can try it too? Help us try new things!

Taco Salad the way I learned to make it from my mother pretty much with lettace, tomatoe, hamburger, taco seasoning, doritoes and perhaps some sour cream and italian dressing added when you put it in a bowl. Also another good summer meal is Italian Sausage on the grill with peppers/onions/mushrooms chopped up and stir fried.

    b)    Raw Broccoli and Cranberry Salad

    c)    Jicama Cocktail

    d)    Grilled Salmon with Beetroot, Tomato and Red Bell Pepper Salad

    e)    Authentic Mexican Sawfish Ceviche

PS I don“t mean to come across as overly self-promotional but these are sincerely some of my favorite summer dishes. I hope you like them.
    All the best,
    Claudia

Oh gazpacho. Good gazpacho. I love good gazpacho.
And anything on the grill (which does not include gazpacho).

Clive:  You beat me to the punch.... YES, gazpacho made in quantity and frozen in small containers.... I even "use" it by taking those frozen containers with me when I go sailing.... (keeps my beer cold until I thaw and eat it!!!)

My favorite is an easy one. Make some tuna or chicken salad and place a big spoonful on top of a halved, fresh, ripe tomato. I never tire of it and it is healthy. Ham salad is good too. I will also boil some eggs and halve them to garnish with. Placing it all on a large lettuce leaf in a flat bowl looks so pretty too. Lots of color and vitamins in the whole thing.

Macaroni salad! It's not summer without a good salad. I have a recipe on my page with pics, if you would like to check it out. And lets not forget some BBQ ribs in a sauce that is made from scratch!, and cooked with real charcoal!

The one thing that is really only good and fresh in summer is corn. I love young small- kernel corn on the cob. I soak it in ice water then either put it on the grill in the husks or remove them and plunge it in boiling water for 5-10 minutes. I serve it with butter and salt . Delicious!!!
If there are any leftovers, I cut off the remaining corn and add it to my buttermilk pancake batter for breakfast.

Watermelon salsa - is my answer long enough now, Hubpages?

I love a garden salad with apple, pine nuts and vinaigrette. I also enjoy ice cream for a special summer treat. I've published hubs for chocolate peanut butter waffle cones, fudgy ice cream sandwiches and mocha almond sundaes. I think the sundae is my favorite: espresso ice cream, hot fudge and toasted almonds. It's hard to beat! http://vespawoolf.hubpages.com/hub/Home … late-Sauce

Grilled veggies on top of pasta, tossed with cheese, like feta or mozzarella.

Take assorted veggies, like tomatoes, bell peppers, squash, zucchini, or whatever else you have on hand. Grill it or bake it in the oven at 450 for 10-20 minutes, stirring occasionally. Toss it with cooked pasta and cheese. Delicious!

It has to be sitting out in back of the house making barbecue on our smoker. There is nothing more flavorful that a lean piece of meat with a vegetable side dish slow cooked over woods that infuse great flavors.

Fresh Veggies including eggplant which is delicious if done like lasagne.
I bread it. Put mozzarella cheese on it and top with bread crumbs.
I bake it in the oven and it makes a perfect summer dish.
Most of my family likes eating very light in the summer.
We also enjoy chicken on the grill.
