    Maybe sliced mushroom, or chopped tomato. Small squares of ham, or sliced smoked sausage. Grated cheese. Yum. I love eggs!

    Jalapenos, onions, and some kind of red sauce.  I think I prefer Tapatio sauce to the others, but Cholula is also good.

    Heck, I got a lot of mushrooms...I might try some mushrooms with the jalapenos, onion, and red sauce...couldn't hurt!

    We love green onion, red pepper and baby spinach. Then I top it with Homemade Mexican Salsa or Pico de Gallo. Yum! It's also good rolled up in a corn tortilla.

    I used to make a dish that I called a frittata. Whether or not mine actually qualified as one I do not know. Quite similar to starting a stir-fry, I included in my eggs cut up zucchini, mushrooms, onions and celery that had been sweating in a pan with some olive oil. As soon as they were soft, I would pour in my beaten eggs on top of the vegetables and cook until finished. For plating, I would top mine with salsa, hot sauce and black pepper. A special treat on top was either cilantro or chives.
