Pumpkin Bars Make a Great Halloween Snack

Pumpkin bars with cream cheese frosting are the perfect fall recipe. These are good for any occasion. I have made pumpkin bars for Holidays like Christmas, Thanksgiving and even Halloween. There are several variations of these bars from more pie like to a cake type bar or a combination of both.

My sister-in-law makes the best pumpkin bars. I'm good...but she edges me out on these, though I use the same recipe that she passed along to me. When it comes to homemade desserts for all the Holidays it comes down to her or me. Everyone else in the family takes the easy way out. Yummy store bakery desserts!

Pumpkin bars make a great Halloween snack. They can be decorated with Jack o' lantern designs or scary black cats on top of the cream cheese frosting.

Cook time: 35 min
Ready in: 45 min
Yields: one 9x13 in pan

Directions for Bars

  1. Preheat oven to 350 degrees F. Butter and flour a 10x15 inch baking pan.
  2. In a large bowl, cream together sugar and butter until light and fluffy.
  3. Beat in the eggs one at a time, then stir in the pumpkin puree.
  4. Combine all the dry ingredient to the pumpkin mixture. Mix well. Add in walnuts. Spread evenly into the prepared pan.
  5. Bake for 35 minutes in the preheated oven, or until toothpick inserted near the center comes out clean. Cool completely before frosting. (Recipe below)

Ingredients for cake bars

  • 2 cups white sugar
  • 3/4 cup butter
  • 4 eggs, beaten
  • 1 (15 ounce) can pumpkin puree
  • 2 cups all-purpose flour, sifted
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1 cup walnuts, chopped

Directions for Cream Cheese Frosting

In a medium bowl, cream together the cream cheese and butter until creamy. Mix in the vanilla, then gradually stir in the confectioners' sugar. Spread over cooled pumpkin bars. Cut into squares.

2 (8 ounce) packages cream cheese, softened

1/2 cup butter, softened

2 cups sifted confectioners' sugar

teaspoon vanilla extract
