Do you have any recipes for gluten free treats for an eight year old girl who cannot handle gluten!
Our daughter has suffered epilepsy fro five years, we have stopped it by cutting all gluten from her diet, but treats are a problem and she can only tolerate so many rice cakes!
Sorry I took a while to get back, I did a lot of research, but I don't have any recipes. I wouldn't know how much substitue flour and all that, but there is some good stuff on the web.

A great recipe I have used is making rice cereal treats. Marshmallows are gluten free and EnviroKids makes a plain rice crispy cereal or a chocolate rice crispy cereal called . I like this recipe because not one child can taste the difference!

This is a huge site with recipes from people everywhere ... kind of like the hubpages of recipes. Bette Hagman cookbooks are the best. Her cakes and other treats turn out better than any boxed mix. Her baked goods have the same springy texture of wheat products. Also, Good Karma rice cream and others are good, and Julie's even makes a GF ice cream sandwich (has dairy though).

My daughter (now middle-aged, though she will probably hate my writing that) was diagnosed with celiac disease when a toddler. Back then, it was very difficult to find recipes for treats without gluten. I made and decorated a sheet "cake" that was really chocolate fudge, and she enjoyed it for her birthday. She practically lived on bananas and rice for a while (there weren't even rice cakes when she was small).
However, today you can find even gluten-free cake mixes, as well as a mix for cookies and one for brownies in the supermarket by a mainstream company, Betty Crocker. There are additional recipes on www.bettycrocker.com that will allow the home baker to adapt their mixes to make various types of treats.
If you like to bake and are even fairly good at it, two cookbooks you may want to try are: THE GLUTEN-FREE GOURMET (Living Well Without Wheat) by Bette Hagman, and HEALING FOODS (Cooking for Celiacs, Colitis, Crohn's and IBS, by Sandra Ramacher. The latter has recipes that are totally grain-free, gluten-free, sugar-free and lactose-free.
In addition, there are online bakeries specializing in gluten-free products and others for special diets. You can find them via a search engine, and they will ship already baked treats, such as gluten-free cakes, to you. Some even pack frozen foods using dry ice. use a gf cake mix, add the eggs and butter or the fat content eg oil . mix the ingredients together, if a little moist add some gf flour. this mixture is wetter than normal biscuit mixture. i often add choc bits, nuts , chopped fruit etc to this mixture. when using vanilla mixture i often make jam drops. bake at 180 degrees if the first batch is not perfect, just aadjust and make another batch. use the goof ups if any make a cheesecake base.
