I would say keep it simple as well as something you are familiar with. No need to try to over do it nor should you have to worry about messing up anything :]
You need to find out the type of need the individual you are dating likes. Food is a essentially a vehicle for socialisation. Hence the type of food you're cooking will be able to satisfy your friends gastronomical inclinations. Stick to cooking the food that you are familiar with. If not hire a chef or ant person that can do the menu service. I hope this helps.
Avoid garlic, asparagus, and brocoli and you should do fine. These three items are known to quickly change the smells of bodily functions and fluids, usually in a negative way.
One find out if vegaterian or not and any allergies these two things could not only spoil date but save a trip to ER had it happen to friends. Id stay away from seafood unless you know they eat it many people dislike fish. Safe bets are pasta and chicken most men like chicken parm with angel hair pasta rather simple in some versions filling etc.
Depends entirely on who you are cooking for and the reason for the date. If it is to impress, then perhaps something complicated and French with lovely wine would suit, but if it for other reasons then you need to pick food accordingly.
Just don't try something out for the first time for the date. Practice before hand if you want to try something new.
You might want to cook something that is easy to eat while talking. (Pork ribs, perhaps not.) Try foods that can be cut into small bites, such as steak, fish, chicken, and salads. That way you can get to know each other without the food getting in the way.
