   Lasagna without Ricotta?
   
   I didn't grow up eating lasagna, I always liked it, but our house was more of a ragu spaghetti type place. Now I'm married, and my husband says that he likes lasagna...but doesn't like ricotta cheese. Lasagna without ricotta is essentially just baked spaghetti. Are there lasagna recipes that don't use ricotta cheese?

   Hi there, there sure is!  I never put ricotta in my lasagna.
   Look for "lasagna bolognese" (with meat sauce), but there are many more.

      I should have mentioned that I use bechamel sauce to make my lasagna creamy. I make bechamel with butter, flour, milk, salt and nutmeg.

   Cottage cheese is a good substitute for ricotta cheese in  lasagna

   A great substitute for ricotta cheese is cottage cheese.  To prevent an imense amount of leakage from your lasagna, you may want to drain the cottage cheese first! Another great way to prevent leakage without draining the cottage cheese is to mix it half-and-half with mozzarella!

   I have made lasagna with cottage cheese before, which is good. I've used cream cheese before as well, which was excellent! I mixed the cream cheese with a little sour cream to make it a little softer and I did not use ricotta or cottage cheese with it.  It was one of the best lasagna's I've ever made. I have been asked to make it several times since.

   I never thought ricotta was a normal ingredient of lasagne. To me the normal recipe involves bechamel (with beef in ragu sauce, or you can use vegetables for a vegetarian version, layers of pasta and mozzarella and Parmesan on top sprinkled with olive oil to make it crunchy.)

   I always use ricotta in my lasagna, I like it. I know someone who used cottage cheese instead, it works out well for them. Maybe your husband doesn't like the consistency of ricotta...it is ok to leave it out. Use more cheese in place of it.

   You can sub cottage cheese, or even mix the cottage cheese in with the ricotta if it is just the texture he dose not like.

    Never! Not if you are Italian
    What else would you put in it????
    The only way I eat it is with ricotta.
