Favorite pan for cooking hamburgers indoors?
The weather in the Midwest has been daunting this year so the grill has sadly been banished for too long. I have finally resorted to cooking my beloved 90% lean hamburger inside. I had thrown out the iron skillet where the burger sat in the fat and recently invested in a Cruisinart iron skillet (mine is black on the exterior). I have to say, I just love this pan - one of my favorite pans now in the kitchen.
Have you tried cooking hamburgers in a pan like this before? Do you have other recipes that might also be appropriate for this pan?
I have several iron skillets, one I inherited about 25 years ago is called a Sizzler Skillet, it's oblong so you can cook your burger or egg in one end and potatoes plus onions in the other. I do love my iron skillets, though don't have as many as I used to, sold the biggest ones as they were too heavy for me to lift any more. My favorite is about 12 inches round, I use it for roasts.
Love being able to start a meal on top of the stove then put it in the oven to finish, like noodle casserole: cook noodles separately, put little olive oil in iron skillet; add tomatoes, peppers, onions, garlic, celery and cook a couple minutes; add mixture of 1/4 cup canned milk and water, half cup shredded cheese, 2 T. cottage cheese, cook til cheese melts, add noodles, grated cheese on top, cook in oven about 30 minutes til brown and crusty on top. Yum!
I wipe the pan out with a paper towel and then rinse immediately after use, while it's still warm, takes all the grease off, then store in the oven til next time.
If you need to re-season an iron skillet, put salt in it while it's hot, swipe it around, then let it cool naturally, then wipe out salt and put it away.
I don't have a favorite pan but I LOVE and I mean absolutely *~<3 LOVE <3~* my George Foreman grill for burgers, a quick steak and even my salmon! It cooks evenly and the slight tilt removes excess grease.

I love my cast iron skillet however am tired of how freaking hot it gets and thus the constant temperature control I have to do when cooking. For instance, I just got done making some apple buckwheat pancakes for the kids and my kitchen is smokey, I had to have the fan on and by the last one I made...

How to Barbecue Hamburgers?I'm looking for a great recipe to barbecue hamburgers. We don't cook them often, but they tend to fall apart and stick to the grill. I've solved the sticking part, but not the falling apart issue. Also, my burgers don't taste that good.
