What is it called if a person doesn't believe in science or a god ?
Just an atheist. Atheism has nothing to do with a belief in science.
Though, to be honest, I'm not sure how it's possible to not believe in science, generally speaking.
You shouldn't believe in science - that's a matter for religious faith or, increasingly, political ideology.
For example, you don't believe in gravity, it is a fact.
But theories of parallel universes, gaia (mother Earth) and singularity get invested with the same religious zeal we used to apply to religion, though there is no proof they are real despite people who really, really want them to be true.
that person is nothing if he/she dont have the spirit to believed.
