Try and have a listen to rodrigo y gabriela. They do some amazing accoustic/classical guitar versions of One by Metallica, Stairway to Heaven Led Zeppelin, Orion Metallica.
The new studio album 11:11 Each song on the album is a tribute to an artist that has inspired both Rodrigo and Gabriela from Jimi Hendrix to Pink Floyd.

If you want to hear some great acoustic versions of rock songs by popular metal bands I recommend these music CD's

    KISS: MTV unplugged

This is a full concert from MTV from 1996. It features 15 songs from the Kiss archive. Some of the best on the CD include Plaster Caster, going blind, Domino, I still love you, Every time I look at you, nothing to lose, and rock and roll all night. It also includes a great version of Beth, which is totally different than the original version. I actually like this version better.

You can also get the entire Kiss MTV unplugged concert as part of KISSOLOGY Volume 3. Unedited, which includes a few funny outtakes not seen on television. Such as a country version of God Of Thunder, and Gene simmons forgetting the words to Domino. This is not on the CD.

    I also Recommend: Poison/Crack A Smile

There is a rumor going around that they did not intend to release this CD. But, someone got ahold of a copy of it and it was selling like mad, so the record company decided to go ahead and release it. This CD has 20 tracks on it.

There are only 4 acoustic songs on this album, all of them from MTV unplugged with the orignal four, back when CC deville
was still part of the band, and, just before he was ousted.
Those include: Your Mama don't Dance, Every Rose has it's thorn, Unskinny Bop, and Talk dirty to me.

The rest of the album is off the wall Poison, and probably stuff that a lot of people haven't heard. Such as an awesome version of 'Cover of the Rolling Stone." and a cut removed from Open up and say ah called "Face The hangman."

Other songs of note are:  Sexual Thing, Lay Your body down,
tragically Unhip, and doing as I seen on my TV. The rest is a mix of Ballads, and off the wall Poison. Stuff that would probably not be played on the radio.

One other note about Poison. If you like their live shows, you can't do better than getting "Swallow This Live." And, be sure to get the 2-disc set. It has a great Drum Solo by Ricki Rocket, and one of the most Powerful Metal Guitar solos you well ever hear from CC Deville.

If anyone knows where I can get my hands on a live DVD of Swallow This Live. I would love to add it to my collection.
Thanks for reading! And, thanks for this question!

MTV unplugged series has lots of high quality acoustic versions to choose from, for me the best are Alice in Chains ( Would? ) Nirvana ( the man who sold the world-actually a Bowie original)  and Pearl Jam ( Jeremy).

I think this is an amazing acoustic live version of "No Surprises" by Radiohead:
