I have a rice cooker and I put rice in the bottom and put frozen/fresh stir fry vegetables in the steamer basket on top to steam. The most easy vegetarian meal ever.
We also do veggie fajitas a lot. Chop up whatever fresh veggies of your choice we use squash, broccoli, a variety of peppers, onions, and garlic- you can add tofu also if you want more protein. Saute everything in a large skillet or wok with a tablespoon of extra virgin olive oil. For a slightly different taste you can use a bit of extra virgin coconut oil as well. As it cooks add a splash of soy sauce or salsa whatever you like for increased flavor. Serve with warmed tortillas and top with guacamole or salsa, some soy cheese (or regular cheese if you prefer) and voila 10-15 minute excellent dinner :)
To make meal prep easier throughout the week I often chop my vegetables a few days in advance and store them in an airtight container in the fridge.
