I always talk "Beauty lies in Beholders Eyes". India is big country, at least 4 race - Aryan, Mongol, Dravidian And Mixed. You can also talked of Arab. India has 21 official language. It is difficult question. I also do not want to offend anyone with my reply, and I like and love most of these Cuisine, I will reply want I enjoy eating and making. I am expert chef, apart from managing money for others.
South India - this is all about health cautious people. I like Idli most. ( Idli).
Hyderabad - Biryani - this is best choice.
    Kerala - Mutton Chukka
    Maharashtra - Zunaka Bhaakar
    Delhi - Chhole Bhature
Punjab - Sarso Da Sag Makki Da Roti
    Rajasthan - Dal Bati Churma
    Bengal - Rasogolla
Gujarat - Baigan ka bhurata bajara ki roti

The list is endless, just more i imagine more I feel eating it.

My husband's favourite is butter chicken with garlic nan. Mine is chicken korma with the flakiest paratha.  I also like chicken tikka and tandoori chicken and chicken biryani. For dessert, his favourite is gulab jamun while mine is ras malai. Sadly, the mitai here in Canada is not that great compared to the ones you can get at Ambala's in England.

    5. Chole Bhature (http://en.wikipedia.org/wiki/Chole_bhature)

    Desserts:
    1. Gajar ka Halwa (Carrot Pudding)
    2. Kheer

There are so many different Indian dishes that it would be impossible to come up with a definitive answer. My own personal favourite is Chicken Madras with pilau rice and naan bread or chapati. Everyone has different tastes so I would recommend trying a few different dishes to see which ones suit your palette.
