I am expert chef, apart from managing money for others.
South India - this is all about health cautious people. I like Idli most. ( Idli).

Kerala - Mutton Chukka

Gujarat - Baigan ka bhurata bajara ki roti
The list is endless, just more i imagine more I feel eating it.
Thank you for your detailed answer, I have to look into these and find recipes.
There are so many different cuisines to choose the best Indian Dish won't be an easy task.
In Non-veg:- Butter chicken,tandoori chicken
In veg :- Dal makhni with nan, chole bhthure, cheese chilly
Sweet dish :- Gulab jamun,Rasogulla.
Thank you will look into tandoori chicken and gulab jamun, since both of these were repeated by another poster too.
My husband's favourite is butter chicken with garlic nan. Mine is chicken korma with the flakiest paratha. I also like chicken tikka and tandoori chicken and chicken biryani. For dessert, his favourite is gulab jamun while mine is ras malai. Sadly, the mitai here in Canada is not that great compared to the ones you can get at Ambala's in England.
Thank you will be looking to find best recipes for these dishes!

There are so many different Indian dishes that it would be impossible to come up with a definitive answer. My own personal favourite is Chicken Madras with pilau rice and naan bread or chapati. Everyone has different tastes so I would recommend trying a few different dishes to see which ones suit your palette.
