    I would do two things...first add about 1/4 cup of olive oil to the recipe (that amount won't affect the taste but if you are concerned about that you could add an extra 1/2 teas. allspice...the olive oil will also add some health properties), and secondly I would reduce the baking temperature by 50 degrees, and bake at a slower rate (cover with foil till the final 10 minutes of baking).

    Without seeing the recipe you are using, I can't really make any suggestions about ingredients.

    Don't over bake it. Test it a few minutes earlier than you have been baking it for.

    Try using a slightly smaller pan for a taller loaf.

    Adding some ground walnuts to the batter at the end can help, too. 

    When it's cool, be sure to wrap it tightly in plastic wrap if your issue is your breads not *staying* moist.
