    What's your favorite healthy meal?

    It's hard to find healthy things that you just love (I mean, don't you just wish they'd make healthy food that tastes just like their unhealthy counterparts?), but I'm interested to hear your guys' healthy favorites!

    My favorite is what I call "Kitchen sink salad."  The base is lettuce/arugula/spinach topped with whatever I have in my fridge - roasted chicken, corn, roasted vegetables, pretty much the sky is the limit!

    I also loved broiled salmon - so easy, healthy, and delicious.  Top with a little lemon juice and tomatoes.

    And, quinoa salad.  Quinoa, corn, avocado, tomatoes, olive oil, lime juice, cumin, salt and pepper, and voila.  Quinoa is a full protein.

    Fish! Something oily like smoked mackeral in a salad, or with new potatoes and fresh veg.... of course then I'd smother it in hollandaise sauce which probably isn't so healthy ;-)

    For an alternative to French Fries, consider baking them in the oven until golden brown. We have tried different things with them, like using Mrs. Dash, Cavender's Greek Seasoning, and even a rosemary/garlic seasoning that went over very well with our kids.

    I would have to say lemon-pepper tofu. It is healthy and soooo good- to me anyways lol.
