That's a hard question to answer as I LOVE cheese and there are so many kinds that I enjoy. I'd have to say my most favorite would be a 4 year aged cheddar.

I quite enjoy a nice, rich Gouda. I love how soft it is and the flavor is wonderful.

I enjoy medium cheddar the most often.  Last night I enjoyed a slice of about two tablespoons of cream cheese for a pick me up snack.  It was so tasty and satisfying.  My mother used to make us cream cheese -chive tea sandwiches.

My husband and I both love Feta cheese. We put it in salads, on pizzas, and baked chicken with olive oil. It is fabulous and versatile. And it is rather on the cheap side when compared to other special cheeses.

Cheedar seems to be a popular choice but I have go with feta as well.  Feta is so versatile in so many different dishes.

I love cheese but it's hard to find many of the varieties I love here in Peru. Imported cheeses, if you can find them, are very expensive here. But I do love a creamy camembert, sharp cheddar or a mild goat's cheese. It doesn't have to be expensive, though. There's nothing like plain old cottage cheese with fresh blueberries!
