Brain Cupcakes Are a No Brainer
Making cupcakes for a last minute party is easy with cake mix, pudding and whip cream. For the cooks who make everything from scratch, you may have gasp with the mention of cake mix. After all, making a cake from scratch is easy to do.
I love to cook and make many recipes from scratch, even without a recipe to follow. However, there are times when a cake mix simplifies a hectic day. When my child was younger, often the school or group that she belonged to needed a dessert. This she volunteered for me to make and told me the night before.
These no brainer cupcakes are simple enough for even the novice cook to make.

Scary No Brainer Brain Cupcakes - Eat Them If You Dare

Ingredients
- Eggs
- water and oil according to the back of the cake mix package
- 1 package of chocolate cake mix
- Few drops of red food coloring for cake
- 1 (3.4 oz. size) package vanilla instant pudding
- 1/4 cup powdered sugar
- 1 -cup milk
- 2 cups whipped topping (Cool Whip or store brand)
- 2 drops red food coloring
Instructions
- Directions for Cupcakes:
- 1. Preheat oven to 350F. In a 24-cup non-stick 3.5 oz. muffin / cupcake pan, Place the cupcake paper lined cupcake liners into the pan.
- 2. Mix the eggs, water and oil in the cake batter according to the directions on the cake mix package. Add a few drops of red food coloring to give it a reddish look.
- 3. Spoon cake ingredients into the 24 lined muffin cups (about 3/4 full).
- 4. Bake at 350F. for 25 minutes or until a toothpick comes out clean when inserted in the centers. Let cool in the pan for 10 minutes, then remove to wire racks to completely cool.
- Directions for Topping:
- 1. Beat the instant pudding, sugar and milk in large bowl with a wire whisk for about 2 minutes. Blend in the whipped topping and add the red food coloring.
- 2. Spoon topping in a pastry bag with a fitted round tip. Begin with the center of the top of the cupcake, zigzag the topping mixture in a pattern that resembles the brain. Work your way out to the outer part of the cupcake tops.
- 3. Refrigerate no brainer brain cupcakes until ready to serve.
