When Jesus was on the cross, what do you think He was talking about when He referenced "Paradise"?
Paradise was a Jewish term in Jesus' time. Many people have different ideas that are very diverse. What do you think?
I think, a place where people rest in peace till the judgment day.
I am not a theologian.
Paradise is a Jewish term but it is also an Islamic term. Is paradise a place, as the term seems to indicate, or is it a state of being? As the term is used by Jews and Muslims, we know that one has to die in order to get there. Paradise is associated with better way of being, as the term is used. One would actually have to go to Paradise and experience it in order to actually know what Paradise is. I have not done that and I do not know anyone else who has. Many people associate going to Paradise as "dying and going to Heaven." Maybe this simple idea, that is the idea of dying and going to heaven is a good enough answer to your question.

Our view of the world and the universe today is different from that of the people of Jesus' time. Their view was of heaven above, world, and Hades or Sheol below. These were physical in their view. Today we can hardly talk of a heaven above - or anywhere - given what we know now of the universe, which keeps expanding! A state of tranquility and peace, free from pain, emotional anguish, suffering, is really what Paradise is. Human spirituality - beyond any religious experiences - does identify and experience Paradise as a state of being. That would be what Jesus meant even if the people of his time had a different understanding.
The thief on the cross that repented went straight to heaven when he died. The Bible says that for the believer absent from the body and present with the Lord.

Paradise is also referred to as Abraham's Bosom. Before Jesus Christ died on the cross, there was a place called Sheol, with two distinct areas.
There is a place where the damned still await their final judgement, and the other called Abraham's Bosom (Paradise) where the Old Testament saints went who were not to be damned, but were waiting for Jesus Christ’s resurrection.
Many of the saints who died and were in the earth were seen risen and walking around on the surface of the earth after Jesus Christ rose from the dead. The saints were atoned for went with Jesus Christ into heaven and will return with Him at His second coming.
Abraham’s Bosom (Paradise) is now an empty place in the earth.
