Hello,
In answer to your second question, in 70CE the Romans expelled all the Jews from Israel and as a result they were split into various groups. Spanish Jews (Sephardi in Hebrew meaning Spain) and German Jews (Ashkenazi in Hebrew meaning Germany). Due to their seperation for many centuries, they each developed different customs, languages and the development of the religion was in different places - Sephardi Jews follow a form of Judaism developed in Babylon whereas Ashkenazi follow the Palestinian practices.
I hope this helps
