      I love these recipes on carrots, Peggy. I think we often have Copper Pennies, the salad one at home, and Carrot Vichyssoise, the soup, I think we have tasted it in restaurants. Great mouth-watering article!

    Peggy sure knows how to make me hungry...and it's bedtime for me.

    I love potato soup and cheddar potato soup...so there's no doubt I would love this one.

    That copper penny sounds delicious too.  I'd enjoy snacking on it.

    Carrot cake...well i might pass on that one, but i do like cake.

    As for gardening...we used to grow carrots but I always had a hard time pulling the ripe ones out of the ground.
    I never learned to can foods either.

    Hi Brenda,

    I grew up watching my mother and grandmother can many different foods.  I learned how to do it when I had that large garden in Wisconsin when I planted 43 tomato plants that first year.  I was overrun with tomatoes! Ha!  As to the carrots, I grew different types and never had a problem pulling them out of the ground.  The ground was quite sandy mixed with compost.
