Why such divergence of belief in the Christian churches when God is eternal and Christ is unchanging

My best guess would be that there is such a wide divergence of belief in the Christian churches is that we, as Believers, tend to try and bend things, including the Word of God, to our own choosing and liking.  A lot like the "itching ears" referred to in Scriptures.   People can't agree on things non-spiritual, so it would stand to reason that we can't agree on things spiritual.  It is true that God is Eternal and Christ unchanging, but we humans waver and change.  It is a sad commentary to the Faith that we Believers can't agree on the most important area of our lives.  Very good question!

The most direct answer is God is infinite and completely and perfectly understands his own mind while human beings are finite and can never know God's mind perfectly and completely. However, most Christian churches agree on the same basic tenets: (a) there is one God; (b) there is only one Son of God; (c) Jesus Christ as the Son of God is God's only source of salvation for humankind;(d) the Bible as presented in the 66 books of the accepted Canon is God's main source of communication to humankind; and (e) the Holy Spirit plays a key role in the sanctification of believers. The Catholic bible may add some books in between but it still includes the same 66.

Simply stated:  God is perfect, man is not.

People, as a culture, like to think, that they, have 'discovered' something new and promising.

the egos of carnal men.    if men would really see the scriptural pattern of co equal eldership and understand dying to self, maybe we could see a change
