Any Suggestions for a Gluten Free Cake Recipe with Frosting?
My birthday is coming up and that means cake! But when you're gluten free you can't just have any old cake. I want to bake a cake for myself just as a back...in case my family doesn't remember to go out and get me a gluten free cake(plus I think there is only one GF Bakery in my state and I don't know what their cakes are like).
What state do you live in? Most supermarkets now have cake mixes for gluten free cakes. I've tried the yellow, white and chocolate cake and they're almost as good as regular cakes.
The next choice is to use gluten free flour and try to assemble a mix by using a regular recipe. Remember to add baking powder and to hold the mixture together, as a replacement for the gluten, add about a tsp of zanthium gum. This can be purchased at health food stores or ordered from online sources. It's expensive but it will last for a long time. I keep mine wrapped tightly and kept in the refrigerator.
Frostings are easy. Egg whites contain no gluten, neither do any already prepared frostings that you buy from grocery shelves.

Rhode island and there are actually two gf bakeries. I think I might try the yellow cake mix by bob's red mill. I haven't tried it I hope its good. Thanks for the advice.
If your only intolerance is gluten; there are lots of options!
Do you have a Trader Joe's nearby? They have a brownie mix that's awesome (Not cake, but cakier than regular brownies)
Namaste gluten free cake mixes are really good, too. And even Betty Crocker makes a gluten free cake mix (not quite as good as namaste). Most pre-made frostings are gluten free. As usual with gluten intolerance, just read the labels!
You can purchase gluten free cake mixes, or if you prefer to make a homemade cake I have found that I can use pretty much any cake recipe with the "gluten free pantry" brand of all purpose gluten free flour. I love the texture and consistency of this flour.
when making cakes I add a pinch of xanthan gum (a necessity for gluten free baking) and I have never had a problem using that brand of flour. Others leave a lot to be desired I've found.
