Portabella mushroom caps are excellent in place of burgers.  We also do kabobs with peppers, tomatoes, zucchini, mushroom, garlic and onion.

I grill all kinds of veggies but  zucchini, eggplant, yellow squash, onions are the ones I grill the most...all sliced on the diagonal so they don't fall through toss with some Olive Oil and herb seasoning. Sometimes I slice them smaller and put them in a grill basket. It's my FAVORITE way to cook (and eat) veggies!!!

Yeah, definitely slice them thicker or diagonal when placing directly on a grill 'cause it really sucks to watch them fall into the fire while flipping 'em over; ha!

Absolutely the long cuts also make for a nice presentation when served and olive oil and herb is the way to go. I also occasional;ly will use a blend of melted butter with minced garlic instead of the olive oil and herbs depends on your tastes.

Cauliflower, Broccoli, tomatoes, capsicumm, potatoes, beans and many more veggies taste delicious, when grilled. Normally I marinate them for some time before grilling.

Thank you Chitrangada Sharan. I think I'll try the marinate for my grilled veggies too.

I've never grilled broccoli and zucchini, but I'm going to add those to my mix.
      Thanks,

If it's a vegetable and it's easy to grill you can bet your bottom dollar that I will grill it. I love most all vegetables and grilling them adds such a great flavor. Some of my favorites are squash and zuchinni. I also enjoy Fresh Portabello mushrooms on the grill. When making certain meals I will fire roast bell peppers and tomatoes.

when you said fire roasted I went with you 100 percent that changes the flavor and with the smoke from the grill its taking it to a whole new level......loving it.

I actually learned how to fire roast from a co worker I traveled with a few years ago. They were from Mexico and always made thier own sauce and salsas. I will say fire roasted flavor is far better then propane grilled. Squash I use propane sometimes

That sounds really good with the balsamic vinaigrette I would add a little fennel powder to that mix.
